In that it’s a combination of grit size and pressure that will yield the best results. With that in mind, the finer the grit, the greater the pressure must be in order to blast efficiently. Too course a grit in combination with too much pressure can damage the sign so be mindful of that.
You should find that a 36-grit aluminum oxide, blasted between 90-100 psi would yield optimum results. If you very in grit you will have to vary the pressure as well.
